I have definitely become well known at work for baking and my new team has quickly learned that I have a bit of a penchant for feeding people. So it didn’t come as much of a surprise to me on Friday when one of my colleagues mentioned that I hadn’t baked “in weeks”. I wasn’t able to get a sensible suggestion as to what I should make (because beef wellington is obviously going to present a real practical transportation issue) so I turned to my Pinterest “to bake” list and came up with these cookie bars. I am glad to say that they went down a treat and I even got a request from someone to make them a whole tray!
Chocolate chip cookie bars

225g butter
3/4 cup caster sugar
3/4 cup dark brown sugar
1 teaspoon vanilla extract
2 eggs
2 1/4 cup wholewheat flour
1 teaspoon baking soda
1 teaspoon salt
2 cups chocolate chips (I used half dark and half white)
Heat your oven to 180 C and line a 20cm x 30cm baking tray with grease proof paper.
In a large bowl beat together the butter and sugars until light and fluffy using an electric beater. Add the eggs and vanilla and mix until well combined.
In a separate bowl mix together the flour, baking soda and salt. Add the butter mixture and mix until just combined. Add the chocolate chips and mix until just combined.
Press the mixture into the prepared baking tin and bake in the centre of the oven for 30 minutes. Allow to cool in the tin for 15 minutes before moving to a wire rack to cool completely before cutting.
You can cut this into whatever size bars you like. It is quite rich so I made them quite small and got 32.
