I swear this is the last Lean in 15 recipe coming up for a while. I have made this a few times because Mr O loves it and although the sauce is very simple it is delicious… it will also stink out your kitchen because that’s how fish sauce rolls!
Prawn and lettuce boats
Adapted from Lean in 15 by Joe Wicks
1 tablespoon olive oil
300g fresh or frozen raw prawns
5 spring onions, finely sliced
2 cloves garlic, finely chopped
1 red chilli, finely sliced
1 tablespoon fish sauce
Juice of one lime
A small bunch of coriander leaves roughly chopped
2 avocados, roughly chopped
2 tomatoes, roughly chopped
2 baby gem lettuces, leaves separated
Heat the olive oil in a large frying pan over a high heat. Add the prawns and fry for 2 or 3 minutes until they turn pink. If you have used frozen prawns you might want to drain off the water. Add the spring onions, garlic and chilli and stir fry for another 2 minutes. Add the fish sauce. Lime juice and coriander. Mix well and remove from the heat.
Combine the avocados and tomatoes in a bowl.
Lay out the lettuce leaves like little boats and then spoon in the prawn mixture, followed by the avocado and tomato.
