So I have a new kitchen toy. It’s called a spiralizer and you can use it to turn firm vegetables like courgettes into thin strands that resemble spaghetti and then eat that in place of pasta to up the veg in your meals (and cut carbs if you’re into that kind of thing). I love courgettes so I started my experiments with the spiralizer with them, which turned out to be delicious.
Courgetti with prawns, asparagus and chilli
2 courgettes
2 cloves of garlic finely chopped
1/2 a red chilli finely chopped
225g fresh or frozen raw prawns
200g cherry tomatoes, halved
8 asparagus spears cut into thirds
A squeeze of lemon juice
Salt
Pepper
Olive oil/ olive oil spray
Spiralise the courgettes and set aside.
Heat a little olive oil (or spray with cooking spray) in a large frying pan. Add the garlic and chili and fry for a couple of minutes. Add the prawns and cook until they turn pink. Squeeze over the lemon juice and then add the tomatoes and asparagus. Cool until the asparagus is just tender. Add the courgetti and toss for a couple of minutes to heat through. Season with salt and pepper and serve.
