Things I have been cooking lately #130: Mediterranean freekeh salad

I made this salad in an attempt to try out some new grains. I loved the nutty flavour of the freekeh, which is apparently a type of green wheat but Mr O was not a fan at all and refused to finish his.I didn’t mind much though since I got to have it for my lunch a couple of days running and it was both tasty and filling.

Mediterranean freekeh salad

250g cooked freekeh (I bought Merchant Gourmand from the grains aisle in my local Sainsbury’s)
1 red pepper, finely diced
1/2 cucumber, finely diced
30g thinly sliced sundried tomatoes
50g light feta, crumbled
1/4 red onion, finely sliced
1/2 bunch of flat leaf parsley, finely chopped

For the dressing

1 1/2 tablespoons olive oil
1/2 tablespoon lemon juice
1/2 tablespoon red wine vinegar
A pinch of dried oregano
A pinch of garlic powder
A pinch of salt
A pinch of freshly ground black pepper

A little extra olive oil or olive oil cooking spray

Preheat your oven to 180 C. Lightly coat the red pepper pieces with either a little olive oil or olive oil spray and spread out on a baking sheet. Roast for 20 minutes.

In a large bowl mix together the freekeh, cucumber, sundried tomatoes, feta, red onion and parsley. Add the cooked red pepper and mix in.

Whisk together the dressing ingredients in a small bowl and then pour into the freekeh mixture and stir well.

Serves 3 – 430 calories per serving
